Brisket - Wagyu F1 x Angus

The Beef: This is 100% grass-fed F1 Wagyu, a first-cross of Full-blood Wagyu over Angus, raised for superior quality and grown with a deep respect for the land. The F1 cross is the sweet spot: it takes the Wagyu's fine intramuscular marbling and pairs it with the Angus frame and the deep, beefy flavour Australian cattle are known for. In a brisket, that marbling is a gift. It bastes the meat from the inside through a long cook, which is exactly what this cut needs.

The Cut: Brisket comes from the breast of the animal, just below the chuck. These are hard-working muscles, full of connective tissue, which is exactly what makes it special. Cooked fast, it's tough. Cooked low and slow, that collagen melts into gelatine and the meat turns rich, tender and deeply beefy. A whole brisket has two parts: the leaner, even "flat" and the fattier, looser "point," joined by a seam of fat. On a Wagyu, even the flat carries enough marbling to stay moist.

How to Cook It: Take the brisket out of the fridge an hour before cooking and pat it dry. Trim the fat cap to about 5mm; you want enough to baste the meat, not so much that it won't render. Season generously with salt and coarse pepper, and keep it simple.

To smoke: Run your smoker at 110–120°C and cook fat side up. When the internal temperature stalls around 70°C (and it will, sometimes for hours), wrap it tightly in butcher paper with a spoonful of beef tallow. Keep going until it probes like soft butter, usually somewhere between 93–96°C internal. Go by feel, not the number.

To braise: Brown it hard in a heavy pot, then add onions, garlic, stock and a splash of wine or vinegar to come halfway up the meat. Cover and cook at 150°C for 4–5 hours until it yields to a fork. A slow cooker on low for 8–10 hours works just as well.

Grass-fed F1 Wagyu fat renders at a lower temperature than grain-fed, so it softens sooner and can tip into falling apart if you push it too far. Start checking for tenderness earlier than you would with a regular brisket. Rest it wrapped for at least an hour (an esky lined with towels is perfect), then slice the flat against the grain about pencil-thick. The grain changes direction in the point, so turn it and slice that separately, or cube it for burnt ends.

Tips

  • Cook once, eat all week. Sliced for rolls, shredded for tacos and rice bowls, or folded through a ragu, a brisket feeds you for days and keeps beautifully in the fridge for 4.
  • Portion and freeze it with a spoonful of the cooking juices in each bag. It reheats without drying out.
  • Save the rendered fat. Wagyu brisket tallow roasts the best potatoes you'll ever make.
  • Better the next day. Braised brisket chilled overnight slices cleaner and tastes deeper.

A Little History: Brisket was always the butcher's bargain, a tough, cheap cut that needed time rather than money. Ashkenazi Jewish families turned it into a slow-braised centrepiece for holidays and Shabbat, and the same cut, salt-cured, became corned beef and salt beef in delis across New York and London. In Central Texas, German and Czech meat markets smoked what they couldn't sell fresh, and over the 20th century that smoked brisket became the benchmark of Texan barbecue. In Japan, thin-sliced Wagyu brisket is a favourite for hot pot and yakiniku. Across all of it, the idea hasn't changed: take a humble cut, give it patience, and turn it into something worth gathering around.

Farm Profile

NGR Meats

NGR Meats is a paddock-to-plate meat brand built on one simple belief — healthy soils grow healthy animals, and healthy animals feed healthy families.

We are a network of young, next-generation, family-owned farmers across Central West NSW united by a shared commitment to regenerative, chemical-free, and sustainable farming. We're not corporates — we're young families building farming legacies, caring for the land, and producing real food the way nature intended.

Our own farm, located 30km outside Dubbo, produces pasture-raised, chemical-free pork and pasture-raised eggs on 350 acres of regenerative country. Our beef comes from Joe and the Kerin family in Yeoval — grass-fed Wagyu raised for superior quality and grown with a deep respect for the land. Our lamb comes from the Maynard family in Narromine — organic, saltbush-grown, and completely chemical-free, farmed by a family passionate about soil health and landscape restoration. Our goat comes from Frank Zeraf in Central West NSW — a young farmer who moved inland to build his dream, raising chemical-free, halal goat with next-generation genetics. Our venison comes from a local young family man and accredited shooter who is passionate about sustainable hunting and feeding his community.

Every product, every farmer, every paddock — it's personal. We're not just selling meat. We're backing the farmers, the land, and the food system we all deserve.
