Ridged tubes built to hold a proper sauce — ragù, bake, anything with body. The shape's ordinary, what's in it isn't.

Made from stoneground durum wheat, long-fermented before it's slow air-dried, so it holds its structure through a long bake or a slow-simmered ragù without going soft. More protein and fibre than the penne you're used to, and made right here in Brookvale on Sydney's Northern Beaches — mixed and dried locally, not trucked in from interstate or shipped in from overseas.

Taste & texture

• Nutty, slightly toasted wheat flavour from the long fermentation — more depth than standard penne
• Firm tube holds its shape through baking, so it won't collapse into mush in a pasta bake
• Ridges and the angled cut grip onto thick, chunky sauces — bolognese, ragù, anything with body
• Cooks up with a light golden colour rather than stark white, from the wholegrain content
• Sits lighter — the fermentation breaks down gluten before it hits your gut
