Made from stoneground durum wheat, long-fermented before it's slow air-dried, so it holds its structure through a long bake or a slow-simmered ragù without going soft. More protein and fibre than the penne you're used to, and made right here in Brookvale on Sydney's Northern Beaches — mixed and dried locally, not trucked in from interstate or shipped in from overseas.
